Cheese Mashed Potato Casserole

5 lbs. Yukon Gold or Russet Potatoes

1 1/2 sticks softened butter

8oz. sour cream

1 tea spoon garlic powder

1 cup shredded cheddar cheese

1/4 cup parmesan cheese

Peel & quarter potatoes. Cook in large pot cover with water bring to boil and cook 20 to 25 minutes until fork tender. Drain return to pan. Mash with electric mixer combining & mashing cream cheese, sour cream, butter, and garlic powder. Top with cheese.  Bake 350* 45 minutes covered, uncover and bake 15 minutes longer.

Oatmeal Cowboy Cookies Updated 2015 Less Sugar & More Fiber

 

(“This is a soft cookie recipe.  My children dislike whole oats in their cookies, so I make the oats into oat flour in my food processor and add whole flax seeds which also have to be ground in the food processor.  My cholesterol is up and flax and oatmeal are natural ingredients to help lower it.  My children also have a textural issue with the whole oats and I was told by a nutritionist that our bodies can’t process and get the nutrients from whole flax seeds, so you should ground them before eating them. In my house the children don’t even realize there are oats and flax in this recipe.”   We all love these cookies and the name reminds us of the TV show “Needs Declassified”on Nickelodeon and the actor who plays “Cookie.”

 

 

3 cups quick cooking oats ground up into flour

1/4 cup ground flax seeds

 

1 ½ cup all purpose flour

 

1 tsp. cinnamon

 

2 tsp. vanilla

 

1 tsp. baking soda

 

1 cup raisins

 

1 cup milk chocolate chips

 

½ cup coconut oil, or margarine can be substituted  

 

½ cup firmly packed brown sugar

 

1/4 cup honey

                                                       

 

                                                       

 

1cup apple sauce

 

2 lg. eggs

 

 

Ground the oats and flax seeds in the food processor. Add all the other dry ingredients and process until well mixed. In another bowl combine the  coconut oil, brown sugar, honey, vanilla, apple sauce and eggs and stir with a fork.  Add to dry ingredients and process only till the wet ingredients are mixed through.  Stir in the raisins and chocolate chips.  Drop with spoon onto greased cookie sheet and bake at %350 for 10 minutes.

Caesar Salad Dressing

1 egg
1t pepper
2TBS Lemon juice
4TBS Mayo
1t Worcestershire
4TBS grated parmesan cheese
1/2t garlic powder
2TBS vinegar
2TBS water

Cook egg in simmering water 10 min. (do not let it come to a hard boil- needs to stay a liquid)
Stir well.

Creamed Tomatoes like Grandma Eckard’s

screenshot.30~2 cups fresh tomatoes chunk-ed or (1 can 14.5 oz)
~3 or 4 TBSP butter
~2 TBSP all purpose flour
~1 1/4 cup milk
~1 TBSP sugar
~1/2 tea salt
~1/4 tea pepper
1/4 tea garlic powder

Cut tomatoes in a bowl, add salt, pepper, sugar, and garlic powder. Put butter or bacon drippings in a hot skillet on stovetop add flour making a roux by slowly adding milk and stirring out all lumps until thick. Pour in tomatoes and cook until consistency of gravy. Serve over thick broken up pieces of bread or bisquits.

Mixed Berry Smoothie

I like my smoothies sweet, so feel free to substitute flavored yogurt of your choice.

1 cup fresh or frozen blueberries

1/2 cup fresh or frozen strawberries

1 Danimals Dannon brand Strikin Strawberry Kiwi flavored Smoothie (drinkable yogurt)

2 heaping TBS. Greek plain yogurt

1 TBS. honey

1 TBS. vanilla extract

1 tsp. seedless blackberry jam

I make single smoothies in my Magic Bullet, but when making for 3 or more people I use my large food processor and triple the ingredients.  Put the frozen or fresh fruit where it will be closest to the blade, and add all the rest of the ingredients and process or blend until smooth and well mixed.

I normally go to my local fresh food market 1 time a week.  I wash all my fruits in a vinegar and water bath for 15 minutes gently stirring the fruits around and than after they have soaked I rinse them well in cold water and freeze them.  Organic is not always available or the price is too much so I hope this cleaning method gets most of the dirt and pesticides off.  Any time I use apples I buy organic or peel off all the skin.

 

No Bake Choc. Peanut Butter Cookies

Easy for children with braces to eat.  Crush all dry ingredients in a food processor than pulse to mix in wet ingredients.

1 cup fine crumbs of vanilla wafers, or graham crackers, or vanilla butter cookies crumbled and made fine in the food processor

1 cup quick oats pulsed in food processor

1 cup peanut butter (creamy for braces) pulsed

1 TBS vanilla

2 TBS Coca powder, I used light sugar Nestle Quick

1/4 cup honey or agave syrup

1 cup raisins pulsed

Make sure all items are fine so that nothing gets caught in braces.  Use a teaspoon to press spoonfuls in clean ice cube trays and refrigerate until set 2 to 3 hours.  Store in refrigerator.
